If I may offer a few suggestions...
B3 and G3 are certainly decent moves, but they're almost always immediately followed up by BB2 and BG2 respectively. This is done to give the bishop(s) a great safe and long diagonal to control the center and put long-lasting pressure on the opponent's(usually king)side.
Also, "knights on the rim are dim". They have very poor mobility there. NC3 and NF3 are the most natural squares for the knights because they have maximum mobility and they control the center of the board. ND2 and NE2 are okay alternatives when the former 2 are unavailable.
Oh, and something I learned when you trapped my queen was to always calculate her safety while in enemy territory regardless of how many squares she appears to have.

I don't get why JMM gave up instead of just taking your queen...

JMM played white. His queen was trapped. The best he could have done was take my rook and be recaptured.

I am just trying openings you wont have played against before to try an catch you off guard, I am sure you have a game plan for all of the usual openings

I think you're over-estimating my opening knowledge. Uncommon openings tend to be uncommon for a reason, and if I follow basic opening principles then I should automatically have an advantage.
